Make the vinaigrette: place vinegar, honey, orange juice, vanilla, salt, and pepper in a bowl. Whisk to combine. Continue whisking and slowly drizzle in the olive oil.
For the salad: remove the stems from the kale and chop them into bite-sized pieces (you should have about 4 cups.)
Place the kale in a bowl and mix in 3 tablespoons of the dressing. Let rest for ten minutes.
Add the strawberries and mix. Taste and add more dressing if needed.
