Ingredients
 

  • ½ bunch kale about 3–4 leaves
  • 6 strawberries sliced
  • ¼ Cup unsweetened shredded coconut
  • 2 Tablespoons pumpkin seeds
  • vanilla-orange vinaigrette
  • 3 Tablespoons white balsamic vinegar
  • 4 teaspoons honey
  • 1 Tablespoon freshly squeezed orange juice
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 Tablespoon olive oil

Instructions
 

  • Make the vinaigrette: place vinegar, honey, orange juice, vanilla, salt, and pepper in a bowl. Whisk to combine. Continue whisking and slowly drizzle in the olive oil.
  • For the salad: remove the stems from the kale and chop them into bite-sized pieces (you should have about 4 cups.)
  • Place the kale in a bowl and mix in 3 tablespoons of the dressing. Let rest for ten minutes.
  • Add the strawberries and mix. Taste and add more dressing if needed.
  • Add coconut and pumpkin seeds. Toss to combine.
