Roasted Tomato Salsa

A rich, smoky salsa made by broiling tomatoes, peppers, onions, and garlic, then blended to perfection.

Ingredients
 

  • 4 tomatoes
  • 2 jalapeño chiles
  • 1 serrano chile
  • 3 cloves garlic
  • 3 green onions ends trimmed
  • ¼ white onion
  • 3 Tablespoons cilantro stems removed
  • 1 lime juice of
  • 3 Tablespoons chicken or vegetable stock
  • salt and pepper to taste

Instructions
 

  • Set oven to broil.
  • Place tomatoes, chiles, garlic, white onion, and green onions on pan and place under broiler.
  • When tops of vegetables are charred, flip and char the other side.
  • Remove vegetables as they become charred and place in blender.
  • Add cilantro, lime, stock, salt, and pepper to blender.
  • Blend to desired consistency.
  • If salsa is too thick, thin out by adding water, 1 tablespoon at a time.
  • Taste and add salt if needed.
