Chimichurri Pasta Salad

A colorful and tangy pasta salad tossed with chimichurri, mozzarella, and tomatoes.

Ingredients
 

  • 8 oz small pasta (I use orecchiette)
  • 1 Cup cherry tomatoes
  • 1 container mozzarella balls (8 oz, ciliegine size)
  • Cup chimichurri sauce

Instructions
 

  • Cook pasta according to package, drain and rinse with cold water.
  • While pasta is cooking, drain and cut mozzarella balls in half.
  • Cut tomatoes in half.
  • Toss pasta with 2 Tablespoons of chimichurri sauce.
  • Add tomatoes and mozzarella to pasta and stir.
  • Add enough chimichurri sauce to coat salad (about 1/4 cup).
  • Taste and add salt or more chimichurri sauce if needed.
