- 8 oz small pasta (I use orecchiette)
- 1 Cup cherry tomatoes
- 1 container mozzarella balls (8 oz, ciliegine size)
- ⅓ Cup chimichurri sauce
Cook pasta according to package, drain and rinse with cold water.
While pasta is cooking, drain and cut mozzarella balls in half.
Cut tomatoes in half.
Toss pasta with 2 Tablespoons of chimichurri sauce.
Add tomatoes and mozzarella to pasta and stir.
Add enough chimichurri sauce to coat salad (about 1/4 cup).
Taste and add salt or more chimichurri sauce if needed.
